This homemade durian ice cream is so creamy and delicious, no one would guess that it is vegan! So, if you are allergic to dairy products such as milk, butter and cream and/or eggs, this is one easy ice cream you can easily make and safely eat in the comfort of your home. All you need to make this yummy ice cream are 3 ingredients you can easily buy and whip up within 10 minutes. This would be a treat for your dinner guests as well. INGREDIENTS:
3 to 4 cups durian flesh
1 to 2 cups coconut flesh
1 cup non-dairy (or dairy, if you prefer) whipping cream
METHOD:
1. Prepare whipping cream in a mixer as per package instructions until light and fluffy.
2. Blend durian and coconut flesh together until smooth.
3. Add durian and coconut mixture into the mixer with the whipped cream. Mix until well combined.
4. Pour ice cream batter into a container and freeze for 2 hours.
5. After 1 hour, remove from freezer, mix the batter and place it back into the freezer.
6. Repeat Step 5 one or two more times then leave it to finish setting in the freezer.
7. Take the ice cream out of the freezer to let it soften slightly, scoop out a portion and enjoy!
Note: Instead of freezing your ice-cream in one large container, you can freeze it in ice cube trays (in this case, you may omit Steps 5 to 7) or in small, single serve containers to be enjoyed individually.
